INGREDIENTS: Organic Dried French Green Lentils
COOKING INSTRUCTIONS: Boil 3 cups water or stock. Add 1 cup rinsed lentils. Reduce heat, cover and simmer 15 to 25 minutes, depending on desired firmness. Remove from heat, drain and enjoy! For extra seasoning, add herbs or vegetables directly into cooking liquid.
French Green Lentil Hummus
Makes about 3 cups
1 cup Old Fashion’s Organic French Green Lentils
3 cups water or vegetable broth
2 garlic cloves
1/4 cup olive oil, plus extra for drizzling
1/4 cup tahini
2 Tbsp. lemon juice
1 tsp. ground cumin
Salt to taste
Cook lentils with broth according to package instructions; drain and cool completely. Place all ingredients into a food processor. Process until smooth, scraping down sides of bowl as needed. Transfer hummus to a bowl and drizzle with additional olive oil. Serve with pita wedges, vegetables or crackers.
